INSTRUCTIONS

 

Mix together all dry ingredients. In a separate bowl, combine oil, milk, eggs and vanilla. Add to dry ingredients, and mix until blended. Add cranberries. Lightly coat muffins pans with vegetable spray, and deposit batter for each muffin. Top with granulated sugar.
Bake at 400°F for 25 to 28 minutes, or until tester comes out clean.
Yields 48 muffins
