Last week my team mate, Jessica, and I were tasked with making a chocolate box filled with various truffles and decorated with a chocolate flower and chocolate butterfly. In the end we each made our own versions of a box (or vessel) made entirely of chocolate but shared what candies we made. My box was round and made of dark chocolate with a window made of isomalt just off of center on top. My flower was flower in shape but I still can't figure out what kind exactly, like a daisy but more sphere-ish. Miss Jessica's box was actually an egg, made by using a mold and and randomly striped with milk and dark chocolate and then thoroughly coated it with white chocolate, it was awesome.
For the truffles we made-
muscadine- which is basically boozy ganache dusted with powedered sugar
toasted macadamia- white chocolate shell filled with milk chocolate ganache and a toasted macadamia nut
white chile- white chocolate and cayenne shell filled with a chipotle white chocolate ganache
almond rocher- a classic confection basically candied almonds coated with chocolate (very tasty)
blood orange- dark chocolate shell filled with a blood orange caramel ganache
Chef said we did pretty good so I'm stoked that I didn't fail boat. But chocolate is mad stressful.
