Winding Down


Another great term is winding down for me here at OCCI. You know what that means though, right?! FINALS and PRACTICALS! WOOHOO! So far, 'A la Carte' has been, hands down, my favorite term of culinary school so far. Lots of people like to rave about the 'International Term', because of the diversity of the foods, but that just isn't the case for me. Don't get me wrong, I love international foods! Being African, I have been exposed to my fair share of diverse foods. The reality for me, though, was that the other terms were too slow! Since I have been in school, I've been antsy to utilize the knowledge I've gained, and to get a chance to see where my cooking actually stacks up relative to the real world! Third term a la carte offers me that possibility because of the luncheons we host. On these particular days, I have to work at a faster pace, think quicker, be more accurate, and just plain have more fun! Restaurant work is amazing! Although I will miss this term, I am looking for to our 'Garde Manger' unit, and the cold foods that await!
