This is one of my favorite cookies. I'm not big on raisins, but oatmeal cookies are crazy tasty and so are craisins, so this is a nice substitute.
Butter 1# 5oz
Brown Sugar 2# 13oz
Eggs 10oz
Vanilla 1 oz
Bread Flour 1# 15oz
Baking Powder 1oz
Baking Soda 1/2oz
Salt 1/4oz
Rolled Oats 1# 10.5oz
Craisins 1# 6.5oz
Method:
1. Scale all ingredients accurately.
2. Cream butter and sugar on medium speed until mixed thoroughly but not fluffy.
3. Combine dry ingredients and add to bowl, mix until 50% incorporated.
4. Add the craisins and oats and mix until incorporated.
5. Scoop 2 oz portions onto lined sheet pans, flatten slightly with palm of hand.
7. Bake at 375 for 12 to 15 minutes.
