High School Chefs


Marshfield High School has been blessed with the opportunity to work with one of our extremely talented baking instructors. Chef Darrell Folck, CEC, CEPC, ACE, who recently joined the OCCI team in August 2010. Chef Folck has worked in many restaurants throughout California, He became an instructor at California School of Culinary arts (2002), won educator of the year for CEC Corporation (2003), became executive pastry chef of California school of culinary arts managing the production operation (2004), became Certified Executive chef in (2005), won Chocolatier of the year in Los Angeles (2008), won 1st place Chocolate Salon LA (2009), top ten chef instructor of the year in the USA from chef 2 chef, # 10 (2009) and then won chef educator of the year for LCB Los Angeles (2009). Wow what a busy guy! That’s one reason why we love Chef Folk for all his “know how” and willingness to teach our students what it takes to become a great baker.

Chef folk has been teaching Serve Safe for Marshfield High School since September, and also gives delicious food demos every other day for the students. Baked Alaska, Mousse Cake, Clam Chowder, Bouillabaisse are just a few items the students have learned to make.  The students had a special trip to OCCI where they took a tour of the school, and had a special 5 course meal provided by Chefs Table Maddie Cutts, Brittney Cummings ( That’s Me), and Special guest Chef Folck. The meal was a great hit; The kids licked their plates clean. We had many comments that the meal was one of the best yet. So come treat yourselves to the delicious cuisine served at Chefs Table weekly. You won’t be disappointed.
