Community members interested in Tai cooking, gourmet cooking and making Christmas candy will have the opportunity to learn some new tricks this fall at the Southwestern Oregon Community College Oregon Coast Culinary Institute.
Each two-part workshop is taught by an OCCI chef instructor and consists of six hours of hands-on professional training. In order to participate, students must be at least 16 years old, or attend with an adult. Each session is scheduled from 6 to 9 p.m. at OCCI.
The following workshops will be offered this fall:
Tai Cooking: Participants will learn to cook real and authentic Tai food, as well as Tai food flavor balances. This class is geared toward amateur and experienced cooks wanting to learn to cook simple Tai dishes and features step-by-step demonstration. Sessions are scheduled Oct. 16 and 23;
Intro to Gourmet Cooking: This series of classes for the beginning cook includes tips on how to choose and care for knives; prepare basic ingredients such as shallots and garlic; how to truss and roast a chicken; filet a trout; and prepare risotto and fresh asparagus to complete a delicious evening meal. Sessions are scheduled Oct. 30 and Nov. 6; and
Christmas Candy: Participants learn to make fun and festive holiday treats, including Yule Logs and many more in this class, which is scheduled Nov. 26 and Dec. 3.
