With a low ratio of students to instructor in the classroom, you will receive individualized, hands-on training in a dynamic, challenging atmosphere that affords you every opportunity to learn, practice and excel. To truly become a leader in the culinary industry, it takes step-by-step, personal instruction provided by certified experts.

Your learning experience at OCCI will be divided between classroom theory such as culinary nutrition and calculations, and hands-on applications including basic knife skills, garde manger, a la carte cooking, pastry and baking. Because OCCI is a flexible, student-centered environment, students may choose morning or afternoon sessions to spend in the skill-driven kitchen laboratory.

The Chef Instructors will work with each student to develop a personal success plan that identifies current skill levels and goals for achievement. Along with theoretical and practical learning, the small, interactive atmosphere at OCCI fosters team building, self-confidence, and organizational skills -- the right mix of ingredients for success in the culinary industry.
